Beef and Chorizo Meatballs (cooked fireside)

 

Ingredients:
1.5 lb. Ground Beef
2 links of Chorizo, removed from casing
2-3 Shallots, finely minced
4-5 cloves Garlic, finely minced
Parsley, about 2 tablespoons, finely chopped
Cilantro, about 2 tablespoons, finely chopped
Pinch of Salt and Pepper

Tomato, I used one enormous tomato, roughly chopped (sub 14.5 oz can diced)
White Wine, 1 cup
Splash of water as needed

Method:
Add beef, chorizo, shallot, garlic, parsley, cilantro, salt and pepper to a bowl and mix until well combined. Shape the mix into roughly 1 inch diameter balls. Add to a cast iron pan heated to medium heat with a small drizzle of olive oil. Brown on all sides, rotating the balls every few minutes. Once the balls are browned, reduce heat, and add the diced tomato and cup of white wine. Allow the balls to continue to cook while the tomato and wine cook down. Serve with more parsley or cilantro sprinkled overtop and a side of crusty bread.
